Don’t mind me, just starting soup season the day we get the first slight cooldown even if I am still in shorts! This one is a fave. My kids like it, doesn’t get much easier, and freezes very well. And that’s a win in my book. This makes about 8 servings.
INGREDIENTS
2 lb ground beef
1 yellow onion chopped
2 bags frozen mixed veggies
2 cans condensed tomato soup
2 cans diced tomatoes (optional)
1 tsp mustard powder
1 TBS Worcestershire sauce
4 c beef stock or base (I like base, add another depth of flavor)
Diced yellow potatoes (optional)
Salt and pepper to taste
INSTRUCTIONS
Sauté meet until browned and cook through.
Add everything else, and cook until veggies cooked through.
