Don’t mind me, just starting soup season the day we get the first slight cooldown even if I am still in shorts! This one is a fave. My kids like it, doesn’t get much easier, and freezes very well. And that’s a win in my book. This makes about 8 servings.

INGREDIENTS 

  • 2 lb ground beef
  • 1 yellow onion chopped
  • 2 bags frozen mixed veggies
  • 2 cans condensed tomato soup
  • 2 cans diced tomatoes (optional)
  • 1 tsp mustard powder
  • 1 TBS Worcestershire sauce
  • 4 c beef stock or base (I like base, add another depth of flavor)
  • Diced yellow potatoes (optional)
  • Salt and pepper to taste

INSTRUCTIONS

  1. Sauté meet until browned and cook through.
  2. Add everything else, and cook until veggies cooked through.
  3. That’s literally it!!!
