One of the HUGE time savers I’ve found is using spice blends, taco seasoning is something I always have on hand. Same with Rotisserie chickens – they pack the flavor, and talk about convenience (thanks Costco!). We do Taco Tuesday most weeks in our house, and I have been craving tortilla soup as the weather cools off! This hit the spot.

INGREDIENTS 

  • 1 diced yellow onion (optional)
  • 3 diced carrots (optional)
  • 1 shredded and diced Rotisserie chicken
  • 1 can drained black beans
  • 2 cans Rotel
  • 2 c frozen corn
  • 4 c chicken broth
  • 1 can cream of chicken
  • 1 TBS taco seasoning

INSTRUCTIONS

  1. Put it all in a pot until thoroughly heated (and carrots cooked through if adding).
  2. That’s it!
  3. Serve as is, or with tortilla strips, avocado, cilantro, and lime juice.
