I make a cheese log similar to this around Christmas time, but wanted to try my hand at a pumpkin spice one for a neighborhood moms gathering I was hosting and OMG! Amazing. This would be a perfect appetizer for any Fall event!

INGREDIENTS

  • 8oz goat cheese
  • 4 oz cream cheese
  • 2 TBS pumpkin butter (I love the one from Trader Joe’s)
  • 1 tsp pumpkin spice blend
  • 1/2 c pecans
  • 1/2 c dried cranberries

INSTRUCTIONS

  1. Pulse pecans and cranberries in food processor until finely chopped consistency.
  2. Set all but about 1/4 c aside.
  3. With the 3/4 c remaining, add cheeses and pumpkin spice and pulse until thoroughly mixed.
  4. Form into log on plastic wrap, roll tightly, and place in refrigerator for half an hour.
  5. Once fully chilled, take out, remove from plastic wrap, and coat the outside in remaining pecans and cranberries.
  6. Roll back up in plastic wrap, and chill until chow time!
