Still a shot warm in the afternoons here in Texas, but it’s soup season in my house! I’m a big fan of soups – easy, one pot for wash clean up, hearty, and most are very freezer friendly.
This pasta fagioli was delish, so easy at a handful of ingredients, and *kinda* took on the flavor of spaghettios. This is a keeper!
INGREDIENTS
1 medium diced onion
1 TBS crushed garlic
3 large carrots chopped
4 c veggie broth
2 11oz cans tomato sauce
1 TBS Italian seasoning
1 can cannellini beans
1 bag ditalini pasta
Italian sausage (optional)
INSTRUCTIONS
Sauté veggies with a little oil of your choice.
Once soft add rest of ingredients EXCEPT pasta.
Bring to boil, and add pasta (cooking per box’s directions)
