Still a shot warm in the afternoons here in Texas, but it’s soup season in my house! I’m a big fan of soups – easy, one pot for wash clean up, hearty, and most are very freezer friendly.

This pasta fagioli was delish, so easy at a handful of ingredients, and *kinda* took on the flavor of spaghettios. This is a keeper!

INGREDIENTS 

  • 1 medium diced onion
  • 1 TBS crushed garlic
  • 3 large carrots chopped
  • 4 c veggie broth
  • 2 11oz cans tomato sauce
  • 1 TBS Italian seasoning
  • 1 can cannellini beans
  • 1 bag ditalini pasta
  • Italian sausage (optional)

INSTRUCTIONS

  1. Sauté veggies with a little oil of your choice.
  2. Once soft add rest of ingredients EXCEPT pasta.
  3. Bring to boil, and add pasta (cooking per box’s directions)
  4. Lower to low/medium heat until pasta done.
  5. Enjoy!!
